Nature builds more than a billion tonnes of chitin every year, and almost all of it goes to waste. Meanwhile a shrimp processing line discards around two thirds of the animal as shell — material that carries 20–40% chitin by dry weight. Eata Marisource sits at the meeting point of those two facts. We collect crustacean shell from traceable seafood processors, run it through a controlled demineralisation–deproteinisation sequence, and supply the purified biopolymer as powder, flake or nanofiber to labs and plants that need a renewable structural polymer with real performance data behind it.
Chitin looks unremarkable — an off-white, water-insoluble powder — but two batches that look identical can behave completely differently. The allomorph, the acetylation level, the residual protein and ash, the crystallinity and the particle window all move the needle, so every one of those numbers appears on our certificates rather than hiding behind the word “pure”.

From Seafood Floor to Structural Polymer
Three washes do the heavy lifting, and each one is a trade-off you should know the settings of. Demineralisation in dilute mineral acid dissolves the calcium carbonate frame — watch a tank mid-run and the shell visibly fizzes as CO₂ leaves. Deproteinisation follows in warm alkali, stripping the protein matrix that locks the chitin fibrils together. A mild oxidative polish then lifts the astaxanthin and other pigments. Push any of these steps too hard and you get a whiter powder with a shorter chain; hold them gentle and you keep molecular weight but carry more residue. We set the conditions per grade and report the outcome, so you can pick the compromise that suits your downstream chemistry — deacetylation to chitosan, hydrolysis to N-acetyl glucosamine, or direct use.
Acid demineralisation in progress: carbonate leaving the shell as a stream of fine bubbles.
Alpha, Beta or Gamma — Ask Which Allomorph You Are Buying
Most catalogue chitin is α-chitin, the antiparallel, heavily hydrogen-bonded form from crab and shrimp shells. It is the most stable polymorph and the hardest to disperse — crystalline elastic modulus measurements land around 41–60 GPa. β-chitin from squid pen packs its chains in parallel, which leaves the crystal open to swelling and reagents; single-fibril measurements have reached 100–200 GPa, and the same open lattice makes it far more reactive in derivative chemistry. γ-chitin turns up in fungal walls and a few insect cocoons and is rarely traded as such. If your formulation depends on dispersability or surface chemistry, the allomorph matters more than the price per kilo.

Numbers Behind Every Drum
- Degree of acetylation: ≥ 90% on standard grades, ≥ 95% on high-purity; determined by FTIR band-ratio and confirmed by titration or ¹³C NMR on request
- Residual ash ≤ 1% (0.5% high-purity) and residual protein ≤ 1% (0.3% high-purity) — the two numbers that quietly ruin a downstream reaction
- Moisture ≤ 10%; pH of a 1% slurry 6.0–8.0
- Particle window to order: 20–40, 80–100 or 80–200 mesh, or milled below 0.5 mm on request
- Heavy metals held tight — As ≤ 1 ppm, Cd ≤ 1 ppm, Pb ≤ 0.5 ppm, Hg ≤ 0.1 ppm — because crustacean raw material demands it
Planetary ball milling brings coarse flakes down to the particle window your process calls for.
Crystallinity Is Measured, Not Assumed
Extraction severity shows up in the X-ray pattern long before it shows up in your process. We log a powder diffractogram on every lot, calculate the crystallinity index against the reference peaks, and file the trace with the batch record. FTIR runs alongside it for acetylation and residual protein signatures. Buyers screening nanofiber yields or enzymatic digestibility find this pair of numbers predicts behaviour far better than appearance ever will — a lower-crystallinity cut fibrillates faster, a highly crystalline cut reinforces better.
Powder X-ray diffraction confirms the polymorph and crystallinity of every chitin lot before release.
Where Chitin Pulls Its Weight
- Water-treatment research — chitin and its nanofibers bind metal ions and dyes; published comparisons put lead uptake above 60 mg/g on nanofibers, and chitin-nanofiber membranes have separated oil-in-water emulsions at over 95% efficiency across 30 reuse cycles
- Agricultural R&D — chitin fragments act as elicitors that wake up plant defence pathways and feed chitinolytic soil bacteria, making the polymer a staple of biopesticide and soil-amendment studies
- Feed science — poultry trials at 0.5% dietary inclusion recorded double-digit weight-gain improvements, and aquaculture teams use it to study gut microbiota
- Paper and packaging studies — wet-end addition raises sheet strength, and phosphorylated chitin nanofibers give paper self-extinguishing behaviour
- Biomedical materials research — scaffolds, wound-dressing prototypes and injectable hydrogel reinforcement built on its biocompatibility and slow biodegradation
- Enzymology — colloidal chitin and nanowhisker substrates for chitinase kinetics and screening assays
- Precursor chemistry — the industrial starting point for chitosan, glucosamine and N-acetyl-D-glucosamine production

Plenty of the orders we build started as a phone call about a problem grade: a nanofiber suspension that would not gel at the customer's concentration, a low-ash cut for a catalysis study, a flake with a DA ceiling for a controlled deacetylation. Describe the spec and the process behind it — we will develop against your in-house method, verify on pilot batches and freeze the recipe before the first production run ships.
