Ask for a marine peptide and you will be handed a mixture; ask for a salmon peptide and you are handed a history. Salmo salar is the most intensively farmed finfish on earth, raised in controlled sea cages under feed and health programmes that barely varied for decades, and that monotony is precisely what makes its peptides useful. Norway alone grows more than 1.3 million tonnes of Atlantic salmon a year, and roughly a quarter of that tonnage leaves the fillet line as frames, skin and trimmings — a side stream so voluminous and so compositionally steady that peptide lots cut from it in different months still behave like the same material.
Eata Marisource supplies enzymatic hydrolysates from Atlantic and Pacific salmon processing streams in molecular-weight windows from under 1,000 Da to several kilodaltons, with protein content, distribution curves, ash and microbiology documented lot by lot. Buyers working at sequence level can order reversed-phase or size-exclusion fractions, and every grade can be traced back to a stated starting tissue.
One Species, One Substrate
Most fish hydrolysates are blended from whatever arrived at the dock that week. Salmon hydrolysates are not. Because the farming cycle, feed and harvest weight of farmed salmon are standardised, the collagen from its skin and the myofibrillar protein from its frames arrive with a reproducible amino-acid balance — glycine and proline heavy in the skin stream, lysine and leucine rich in the frame stream — and processors can tune hydrolysis against a substrate they have already characterised. Peptides released from cold-water salmon collagen also inherit a low imino-acid content, which means the chains unwind at modest temperatures and yield to gentler enzyme treatments with less thermal damage to the bioactive sequences inside.

Sequences Worth Naming
Salmon peptides have been sequenced often enough that a buyer can ask for behaviour documented at residue level rather than claimed in a brochure. A selection from the published record on salmon skin and frame material:
- Ala-Pro from salmon skin collagen, inhibits angiotensin-I-converting enzyme at an IC50 near 0.060 mg/mL — roughly twenty times the potency of the parent hydrolysate.
- Gly-Arg and Val-Arg, also di- and tripeptides from the same skin hydrolysate, with IC50 values of 0.73 and 0.332 mg/mL respectively in follow-up work.
- Gly-Leu-Pro released from chum salmon skin gelatin, lowered systolic blood pressure by about 31 mmHg in spontaneously hypertensive rats six hours after a 20 mg/kg oral dose.
- Pro-Met-Arg-Gly-Gly-Gly-Gly-Tyr-His-Tyr a ten-residue antioxidant peptide identified in a bacterial-protease hydrolysate of salmon skin collagen, with an ORAC value of 2.51 mmol TE/g for the pure sequence and 2.78 mmol TE/g for its parent fraction.
- Anti-freezing activity hydrolysates above 3 kDa show ice-structural protection while the sub-3,000 Da fraction carries the antioxidant load — a single run of the same substrate can therefore feed two very different product briefs.
Tandem mass spectrometry confirms which sequences actually ended up in the lot.
What the Powder Does on the Bench
Molecular-weight fractionation is what turns a hydrolysate from a feed commodity into a working ingredient. Tight sub-1,000 Da cuts dissolve in cold water at high solids without haze, which matters for clear beverages and cell-culture supplements alike. Mid-range fractions hold fat in emulsions and stabilise foams. The larger anti-freezing fractions do something rarer: they slow ice recrystallisation through freeze–thaw cycles, so frozen surimi, fillet blocks and probiotic formulations keep a finer ice crystal structure when salmon peptides are included at low percentages. Bitterness, the usual tax on deep hydrolysis, is managed at process level — enzyme pairing, controlled degree of hydrolysis and, where needed, a mild carbon or resin polish that trims hydrophobic peptides without stripping the active ones.

Quality Panel
Each lot ships with the panel a peptide buyer actually needs, not just a protein figure:
- molecular-weight distribution by size-exclusion chromatography, with the cumulative percentage below each stated cutoff.
- degree of hydrolysis by OPA assay, plus free amino acid content.
- amino-acid profile of the eighteen common residues, hydroxyproline included for skin-derived grades.
- lipid oxidation indicators (peroxide value, anisidine) and ash after desalting, the two figures that decide shelf stability in high-protein powders.
- microbiology and biogenic amines, with heavy metals reported against regional limits.
Column fractionation divides a single hydrolysate into cuts with distinct behaviours.
Where Salmon Peptides Are Working
- cryoprotectant and anti-freezing systems for frozen seafood, surimi and frozen probiotic formulations.
- nutraceutical and functional-food research built around ACE-inhibitory and antioxidant activity, where sequence documentation matters.
- serum-free and low-serum cell-culture media as a defined peptide nitrogen source.
- aquafeed and pet-food palatants, where hydrolysates outperform intact protein on early-stage digestibility.
- cosmetic and dermal research formulations using skin-collagen-derived low-molecular-weight fractions.
Spray drying fixes the hydrolysate into a free-flowing powder at controlled inlet temperatures.
Custom Production
Starting tissue, enzyme system, degree-of-hydrolysis target and molecular-weight cutoff are all selectable, and combinations can be locked over repeat lots so that a fraction validated in an early study behaves the same way at pilot scale. Sequence-enriched fractions from a specific literature protocol can be reproduced against the published conditions, and co-blends with other marine ingredients from our range are available for formulation work. Tell us the assay your downstream work depends on and the specification sheet will be built around it.
Send your grade, molecular-weight window and annual volume, and our team will respond with current specifications, documentation and pricing.
