Carrageenans

Pick up any hydrocolloid brochure and you will be offered a viscosity. Carrageenan offers something rarer: a choice of personalities. The same family of red-seaweed galactans can deliver a brittle, potassium-hardened gel that snaps cleanly on the spoon; a soft, calcium-set gel that bends without weeping; or no gel at all — just a cold-water solution with enough body to keep cocoa suspended in chocolate milk for the shelf life of the carton. Few raw materials give a formulator this much texture control from a single source, and none reacts with milk proteins the way carrageenan does.

That versatility is also why the details matter. A kappa carrageenan destined for a water gel and one engineered for a dairy matrix are not interchangeable, and the gap between refined and semi-refined material decides both clarity and price. We supply all three commercial types across both process routes, blend them with locust bean gum, konjac or potassium salts where the application demands it, and certify gel strength, viscosity and microbiology on every lot rather than quoting typical values from a datasheet.

Three Types, Chosen by Chemistry

The Greek letter on the spec sheet is shorthand for how many sulfate groups sit on the repeating disaccharide — and sulfate count is what separates a gel that sets like porcelain from a solution that never sets at all:

Type Ester sulfate 3,6-AG content Gel behaviour Responsive cation Primary source
Kappa 25–30% 28–35% Strong, rigid, thermoreversible; some syneresis Potassium (dramatic); calcium gives brittle gels Kappaphycus alvarezii
Iota 28–30% 25–30% Soft, elastic, freeze–thaw stable; no syneresis Calcium Eucheuma denticulatum
Lambda 32–39% Nil No gel — high-viscosity cold-soluble solutions Not a gelling cation system Gigartina species, Chondrus crispus

Ion specificity is the part most often under-used. Potassium ions bind directly into the kappa helix, so a gel that struggles at 0.5% in water firms up at 0.2% in milk — and the same logic runs in reverse: swap the counter-ion and you can soften, harden or completely reshape a formulation without touching the carrageenan level. Send us the cation environment of your system and we will match the type, and the salt pairing, to it.

Why Dairy Formulators Keep Coming Back

Carrageenan is the only major hydrocolloid that reacts with milk proteins rather than merely coexisting with them. At 200–400 ppm — an order of magnitude below what water systems need — kappa carrageenan forms a weak, thixotropic network with casein micelles that holds cocoa, fat and minerals in suspension without visibly thickening the drink. The same protein interaction stabilises ice cream against whey-off, gives puddings their cut-spoon body, and lets a dry mix set a flan with nothing more than cold milk. If your product lives in a dairy or plant-milk matrix, the carrageenan conversation starts with the protein, not the gel.

Refined or Semi-Refined: The Route Decides the Product

Two processing philosophies divide the market. Refined carrageenan is extracted into solution under hot alkali — which also strips sulfate and builds the 3,6-anhydrogalactose that hardens gels — then recovered by alcohol precipitation or potassium gelation, washed and milled. Semi-refined carrageenan (SRC, PES or PNG grade) never dissolves: the alkali-treated weed is washed and milled with the carrageenan still locked in the cell-wall matrix, cutting cost at the expense of clarity and fibre content.

Attribute Refined (E407) Semi-refined (E407a / PES)
Gel clarity Clear to transparent Opaque, higher cellulose content
Typical gel strength (1.5%, 0.2% KCl) 450–1,500+ g/cm² depending on type Moderate, lot-dependent
Hot-water insolubles <2% Higher (fibre matrix retained)
Best suited to Clear gels, dairy matrices, pharma and lab work Cost-driven gelling, pet food, technical applications
Colour and texture Cream-white free-flowing powder Tan granules with visible fibre

Carrageenan Oligosaccharides & Derivatives

Cutting the polymer down to DP 2–10 changes what it can do. High-molecular-weight carrageenan builds structure; the oligosaccharide fractions built from it are water-soluble, readily absorbed in biological systems and increasingly studied as antioxidant, antiviral and plant-elicitor actives. We prepare them enzymatically wherever the target allows, because carrageenases cleave the backbone with a precision acid hydrolysis cannot match — κ-carrageenase (GH16) releases even-numbered neo-κ-carrabiose and -carratetraose, ι-carrageenase (GH82) walks down iota chains to tetraose, and λ-carrageenase (GH150), the rarest of the three, opens lambda with sulfatase support.

  • κ-, ι- and λ-carrageenan oligosaccharides — COS and neo-COS series, DP 2–6 or blended windows up to DP 10, freeze-dried powder or solution.
  • Controlled depolymerisation to intermediate molecular weights (5–50 kDa) for film-forming and coating studies.
  • Sulfation level reported per batch by ion chromatography; salt form, counter-ion and degree of desulfation set to order.
  • Characterisation pack per lot: SEC/HPLC molecular-weight profile, ESI-MS or MALDI-TOF fragment confirmation, NMR identity.

What Every Lot Is Tested Against

  • Gel strength, measured on a cast gel at 1.5% in 0.2% potassium chloride, quoted with the cation system stated.
  • Viscosity profile for non-gelling and semi-refined grades at the concentration your process uses.
  • Moisture <12%, pH 8–11 in solution, hot-water insolubles per process route.
  • Heavy metals — arsenic, lead, cadmium, mercury — by ICP-MS against import-market limits.
  • Microbiology: total plate count ≤1,000–5,000 cfu/g, yeasts and moulds ≤100 cfu/g, Salmonella and E. coli absent, on every production lot.
  • Ester sulfate and 3,6-AG content on request, with species and harvest region traceability.

Where Our Carrageenans Work

  • Dairy and plant-milk systems — cocoa suspension, ice-cream and yoghurt stabilisation, flan and pudding sets at 200–400 ppm.
  • Water gels — dessert jellies, air freshener gels, pet food gravies and chunks-in-jelly formats.
  • Meat and surimi — brine injection and tumbled products where kappa–LBG blends hold added water through cook and slice.
  • Personal care and household — toothpaste structure, gel air fresheners, shaving and cleansing gel bodies.
  • Research and biotechnology — hydrogel scaffolds, cell encapsulation matrices, controlled-release studies and oligosaccharide bioactivity work.

Built Around Your Line

Standard catalogue grades are only the starting point. We routinely tune gel-strength windows to a narrow target rather than a broad range, adjust the potassium response of a kappa to your salt level, cut mesh for the dispersing equipment you actually run, and build compound blends against a texture reference you send us. On the oligosaccharide side, DP windows, sulfation degree and salt forms are manufactured to order from gram to multi-tonne scale. Packaging runs from 100 g laboratory bottles to 25 kg bags and lined fibre drums, private-labelled if that is how your supply chain works — and every sample leaves with the lot certificate attached, so approval is never a leap of faith.

Describe the texture, matrix and volume you need, and we will return the matching type with its full specification and lot data.
